Tempeh is a product made from fermented soybeans that have been pressed into blocks. Tempeh has a firm and chewy texture with a slight nutty taste. It can be steamed, sautéed or baked and is often marinated to add more flavour.

Tempeh is a popular vegetarian meat replacement as it works well in a variety of dishes, is packed with nutrients, and is easy to digest. Tempeh is also rich in prebiotics (types of fiber that promote the growth of beneficial bacteria in your gut), which may help promote digestive health and potentially reduce inflammation.

Just 1 cup of tempeh contains 31 grams of plant-based protein, which is over 50% of the recommended daily intake for both men and women‼️

I incorporated tempeh into my mixed veggie and quinoa stir fry. I prepared the tempeh by slicing a tempeh block into strips, marinating the strips in a homemade peanut sauce (1.5 Tbsp sesame oil, 2 Tbsp natural peanut butter, 2 Tbsp soy sauce, 2 Tbsp lime juice, 2 Tbsp maple syrup) for 30 min, and pan-frying the strips until golden brown on both sides.

✨PRO TIP: The iron in tempeh (and other soy products) is best absorbed when paired with foods that are rich in vitamin C – like citrus fruits 🍊, bell peppers 🌶, and broccoli 🥦. Vitamin C helps our bodies utilize iron more effectively.
